Delano Café by Thierry Marx: a new meeting place for gourmet enthusiasts
The opening was eagerly awaited by epicureans. Nestled in the Faubourg Saint-Honoré district of the 8th arrondissement, the Maison Delano Paris hotel unveils its new restaurant, helmed by Michelin-starred chef Thierry Marx.



A new fine dining destination, the Delano Paris hotel has just unveiled its newly opened restaurant, located in the heart of its 200m² historic courtyard, in the 18th-century building where it is housed.
Named Delano Café by Thierry Marx, this Mediterranean-inspired venue immediately transports you to the French Riviera.
The French-Mediterranean menu created by the Michelin-starred chef matches this sunny atmosphere throughout the day: to start with, gourmet dishes that evoke the south, such as crab cannelloni accompanied by guacamole and citrus jelly, an egg served with pan-fried mushrooms, chorizo, and watercress sabayon; on the meat side, duck is served with lemon-confit turnips and a bitter orange sauce; braised beef chuck paired with butternut squash and a Bordelaise sauce, and for fish, squid risoni with squid ink and crunchy vegetables transports us to the French Riviera, while roasted sea bass is enhanced by zucchini in various textures and a sauce vierge. For dessert, the classics chocolate mousse and inverted île flottante take center stage.
The Michelin-starred chef, who opened his restaurant Onor in 2023 and is well known to the general public as a judge on "Top Chef," has, as usual, worked with local products, respecting seasonality and sustainable practices.
Another event at the end of October, the Delano Café will launch its shopping brunch concept. The idea? Enjoy salads and sweet treats before taking advantage of the hotel's valet parking service to shop in the neighborhood's many boutiques.
Chic and friendly, the Delano Bar, with its warm and cozy atmosphere reminiscent of a speakeasy, completes the hotel's offering in a former 18th-century mansion with 56 rooms, including 19 suites, decorated by designer Lázaro Rosa-Violán with refined furniture and contemporary artwork.
And an endless summer continues in the historic courtyard, adorned with wrought-iron chairs, dials, blue doors and windows, and striped benches reminiscent of the south.
