From Farm to Table with a 3-hectare Permaculture Garden
Nature sometimes needs a little help, as Chef Armand Arnal has well understood; he has entrusted eight gardeners with the care of his vegetable garden. And not just any garden—one that earned him a Michelin star. A permaculture vegetable garden, entirely organic, spanning nearly three hectares. It’s a journey from soil to plate that knows no boundaries. In fact, the establishment also features a tropical greenhouse where coffee beans are harvested, not to mention bananas and papayas.
It is also a garden that, according to the chef, “sets the creative tempo,” with a menu divided into two courses: one in six courses, entirely plant-based, while the second combines fish, vegetables, and meats from the region. A local connection that allows visitors to discover the gastronomic riches of the Camargue, since La Chassagnette is located right in the heart of the Rhône Delta, not far from the former capital of ancient Rome: Arles. A wild spot where, on sunny days, we can enjoy an al fresco meal, during which it’s not uncommon to catch the gaze of a few herons. Finally, it’s the perfect setting to savor bold creations, such as a velouté of wild herbs and cosmos flowers, eggplant with shiso vinegar, and perfectly aged Mediterranean bluefin tuna.
