Nature sometimes needs a helping hand, as chef Armand Arnal well understands, entrusting 8 gardeners with the care of his kitchen garden. And not just any garden, since it has won him a Michelin star.





A permaculture vegetable garden, entirely organic, covering nearly three hectares. Like a journey from the earth to the plate that knows no boundaries. The establishment also has a tropical greenhouse where coffee beans are harvested, not to mention bananas and papayas.
It is also a garden which, according to the chef, "is the master of creative tempo," with two menus: one in six courses, entirely plant-based, while the second combines fish, vegetables, and meat from the region. Its local roots allow visitors to discover the gastronomic riches of the Camargue, as La Chassagnette is located in the heart of the Rhône delta, not far from the ancient capital of Rome: Arles. It is a wild corner of the world where, on sunny days, you can enjoy a meal outdoors, during which it is not uncommon to catch the eye of a few herons. Finally, it is the perfect setting to enjoy daring creations, such as a velvety soup of wild herbs and cosmos flowers, eggplant with shiso vinegar, and perfectly matured Mediterranean bluefin tuna.
