A touch of New York at Temple & Chapon, the restaurant at L’Experimental* Marais
The new "rendez-vous incontournables" on rue du Temple
Temple & Chapon, the restaurant at the heart of the brand-new Experimental* Marais hotel, offers a Paris-New York experience. Inspired by the classic American "Chop House" of the 50s, this Marais meeting place opened its doors in March, replacing the former Sinner, which was a little more intimate, more luxurious and, above all, less smoky.




An evening restaurant led by Mélanie Serre, with decor by Tristan Auer
Under the immense cathedral glass roof of the restaurant, redecorated by interior designer Tristan Auer, young French chef Mélanie Serre, who spent her childhood in Ardèche and lived in New York at the age of 17, working for Joël Robuchon and the Eden Rock in Saint Barth, has created this transatlantic bridge in the spirit of the new-generation traditional house of the Experimental* group, with a French menu embellished with a few American twists.
His star creations include Rockefeller Oysters with Joël Dupuch's oven-baked oysters Les Perles de L'Impératrice, lobster roll, a delicious soft brioche with lobster and avocado, crab cake, sole meunière, Pork belly confit with honey, carpaccio de maigre, seasoned just right, and linguini with lobster and Espelette pepper.
To finish, a Paris-New York offers its gourmet roundness, Paris-Brest style.
A successful Paris-New York, vibrant with flavors, washed down with fine vintages like Domaine Champeau's Pouilly Fumé Silex, to be chosen from the almost didactic, superbly explained wine list, illustrated with the house's signature linear drawings.
A lively table and service, to be discovered in a subdued setting in the evening, designed by Tristan Auer.
The architect of the Baths and the Carlton in Cannes has succeeded in creating an intimate atmosphere and hushed spaces, under this huge spectacular ceiling, punctuated by arches and stained glass windows, drawing graphic lines. He also created spaces such as a curiosity cabinet with visual artist Clovis Retif, a sunken lounge facing the open kitchens, and a bar and night lounge upstairs.
The whole is unified, harmonized in a variety of textures in a palette of shades of brown, enhanced by candlelight that creates almost unreal, poetic and scintillating scenes that sparkle in the eyes of diners at table.
